Easy Gujarati Batata Vada Recipe

Ingredients


For the potato filling:




  • 4 large potatoes, boiled and mashed

  • 2 tablespoons oil

  • 1 teaspoon mustard seeds (rai)

  • 1 teaspoon cumin seeds (jeera)

  • ¼ teaspoon asafoetida (hing)

  • 2 green chilies, finely chopped

  • 1 tablespoon ginger, grated

  • 2 tablespoons fresh coriander leaves, chopped

  • 1 tablespoon lemon juice

  • ½ teaspoon turmeric powder

  • Salt to taste


For the batter:




  • 1 cup gram flour (besan)

  • 2 tablespoons rice flour

  • ¼ teaspoon turmeric powder

  • ¼ teaspoon red chili powder

  • Pinch of baking soda

  • Salt to taste

  • Water as needed

  • Oil for deep frying


Instructions


Prepare the potato filling:



  1. Heat oil in a pan and add mustard seeds. When they start to crackle, add cumin seeds.

  2. Add asafoetida, green chilies, and ginger. Sauté for about 30 seconds.

  3. Add turmeric powder and mix well.

  4. Add the mashed potatoes, salt, and mix thoroughly.

  5. Cook for 2-3 minutes, stirring occasionally.

  6. Turn off the heat and add fresh coriander leaves and lemon juice. Mix well.

  7. Allow the mixture to cool completely.

  8. Once cooled, shape the mixture into round balls (about 2 inches in diameter).


Prepare the batter:



  1. In a bowl, mix gram flour, rice flour, turmeric powder, red chili powder, baking soda, and salt.

  2. Gradually add water while stirring to create a smooth batter of coating consistency (not too thick or thin).


Frying the vadas:



  1. Heat oil in a deep pan or kadhai for frying.

  2. Dip each potato ball into the batter, ensuring it's completely coated.

  3. Carefully slide the coated ball into the hot oil.

  4. Fry on medium heat until golden brown and crispy on all sides.

  5. Remove with a slotted spoon and drain on paper towels.

  6. Repeat with remaining potato balls.


Serve hot with green chutney, tamarind chutney, or with pav (bread rolls) as a vada pav. Enjoy your homemade Gujarati Batata Vada!
